Crayfish and
Mitten Crab

This page is a little different. We want to be able to eat these delicious species that live in abundance in our waters and that put pressure on local species. However there is a major barrier in the way of restaurants celebrating them on their menus.

Bob Ring aka Crayfish Bob has 20+ years crayfish experience and he explained how current laws do not allow the sale of live Signal Crayfish and Mitten Crab, due to government fears of them escaping into ‘virgin’ waterways.

This is a major barrier in supplying restaurants and one that we chefs can help by showing the demand. By working with Bob to shift the Invasive Alien Species 2019 DEFRA legislation, which currently only encourages the sale of processed farmed American signal crayfish and allows no sale of Mitten crab. This legislation is therefore of no use to the environment, or to the chef. Bob believes that chefs in much of the Uk should be able to register to take in these species, but only from selected sources where the removal will benefit the environment. Farmed crayfish are alright as a product, but should be avoided if the desire is to help the environment. 

Signal Crayfish: Similar to lobster but with a mild and sweeter flavour.

Mitten Crab: Delicate and sweet taste with an umami and sweet taste.
