Harriet Mansell is a chef, restauranteur, podcast host and wild food enthusiast. Last summer, at her restaurant, Lilac in Lyme Regis, she ran a ‘Garden Table’ experience featuring a wild foods tasting menu. She and her team foraged many of the wild plants for the menu, including Rock Samphire, which was exquisitely incorporated into the pictured snack: fried brioche topped with a sea herbs mayonnaise and mussels stuffed with wilted rock samphire.
