Juice and ferment the ends like Daniel Watkins and Oli Williamson. 1-3% salt and you can keep all the trimmings in!

Sam Trevethyen cooks his ends down , blitzs them and uses that puree for a foam or hollandaise. Niky Chetcuti cooks hers in butter and then uses this to make mayo.

Finely slice the asparagus ends and use them in a slaw like Tom Hunt. If the asparagus are very old you might have to peel them first.

Juice them, pass them and make them into a vinaigrette, asparagus butter emulsion or a veloute like Cosmin Mazilu, Lewis Saunders and Emilie Perez.
Powder
Ferment the ends, dehydrate them and then blitz them to a powder like Jonathan Lienert and Patrick Janoud. ‘Seaweed on steroids’ says Jonathan!
