No Waste KIMCHI

ACME Fire Cult’s great way to make sure no excess leaves go to waste. Yes, this is a 30 litre drum of leek tops, cauliflower and hispi leaves.

INGREDIENTS

- Any excess leaves you have.

- Salt

- Korean pepper flakes (though any red pepper flakes will work)

- Fermented garlic and it’s juice

- Shio Koji

METHOD

  1. Wash and drain your excess leaves.

  2. Massage 2% coarse salt into the leaves (or just salt to taste) and then leave pressed for 24 hours.

  3. Form a tasty slurry, by blitzing together your red pepper flakes, fermented garlic with it’s juice and shio koji.

  4. Mix the slurry with the leaves and if necessary, use a weight to ensure that the kimchi is submerged in its own juices.

  5. Seal for 6 weeks, burping daily if needed, and then store in a fridge.
