  • Locate an experienced forager in regions where sea buckthorn is seen as problematic.

  • Sea buckthorn berries have a unique, tart, and tangy flavour, often compared to a mix of citrus fruits like orange and lemon. Douglas McMaster says it’s like ‘lemon and passion fruit had a baby. Though it’s a bit like coriander, not everyone is going to love it’.

  • Berries can be eaten fresh or juiced when they go soft later in the season. Michael Wachter oxidises the leaves and serves it as an english tea substitute.

  • Restaurant Silo make a sea buckthorn dressing which they split with douglas fir pine oil and they use it on raw cold dishes. Sea buckthorn loves fat!
