Sea buckthorn berries have a unique, tart, and tangy flavour, often compared to a mix of citrus fruits like orange and lemon. Douglas McMaster says it’s like ‘lemon and passion fruit had a baby. Though it’s a bit like coriander, not everyone is going to love it’.

Berries can be eaten fresh or juiced when they go soft later in the season. Michael Wachter oxidises the leaves and serves it as an english tea substitute.

Restaurant Silo make a sea buckthorn dressing which they split with douglas fir pine oil and they use it on raw cold dishes. Sea buckthorn loves fat!
